68 BUSINESSES HAVE APPLIED TO PARTICIPATE AS SPONSORS IN MES DO COCIDO DE LALÍN 2026, AND THERE WILL BE 26 RESTAURANTS MAKING UP THE RANGE OF OFFICIAL ESTABLISHMENTS FOR THIS CELEBRATION.

A massive response, greater than in previous years, from the hospitality industry, food retailers and local producers, endorsing the prestige of the 58th Feira do Cocido. ‘It is a clear demonstration of the support of our business community for the Feira do Cocido,’ says Begoña Blanco, Councillor for Tourism.

The Councillor for Tourism in Lalín, Begoña Blanco, announced today that a total of 68 local businesses have submitted and been accepted as sponsors of the Quality Commitment for Mes do Cocido at the 58th Feira do Cocido in Lalín 2026, according to the official minutes of the Evaluation Committee dated 4 December 2025. Of the 68 companies accepted, 26 of the participants are catering businesses that will make up the list of official restaurants for the Month of Cocido. The municipal representative highlighted that this high level of participation is ‘an unequivocal demonstration of the support of our business community and the real commitment that hoteliers, producers and distributors have to gastronomic excellence and the unique identity of our fair’. Blanco, in relation to the list of restaurateurs participating in Mes do Cocido, insisted that the Quality Commitment they sign when participating as Mes do Cocido restaurants and acting as sponsors of the event "is not a mere administrative formality, but a public guarantee for residents and visitors, ensuring that every product, every service and every establishment meets proven criteria of traceability, freshness, professionalism and respect for the culinary tradition linked to Cocido de Lalín".

26 RESTAURANTS IN MES DO COCIDO

At the forefront of this Quality Commitment for Mes do Cocido 2026 are 26 restaurateurs in this edition - two more than last year - including BAR O POLO, BAR REST. SUSO, CASA CURRÁS, CASA DO PATRÓN, CASA PABLO, COKUUS, CASA SAN MARTÍN, GASTRODEZA, HOTEL NORAT TORRE DO DEZA, HOTEL REST. PONTIÑAS, MESÓN O CRUCE, O CHABULLI DE TOUPIÑA, ONDE ANTONIO MOURISCADE, PARRILLADA AIRIÑOS, PARRILLADA LA ROBLEDA, PARRILLADA VILLANUEVA, PAZO DE BENDOIRO, REST. A ESTACIÓN, REST. BAR SAZÓN & SON, REST. CABANAS, REST. KM 0, REST. LA MOLINERA, REST. LAS PALMERAS, REST. MARÍA JOSÉ, REST. OS ARCOS, REST. TABOADA, which will turn their kitchens into the home of Cocido de Lalín preparation.

Blanco pointed out that mechanisms of this type, such as the Mes do Cocido Quality Commitment, are present at leading European food fairs and function as public seals that verify the quality of raw materials, the transparency of consumer information, the use of products that are characteristic of the area, adaptation to culinary tradition and correct food handling. "The Quality Commitment reinforces our prestige and ensures that the visitor's experience does not depend on chance, but on a professionalised structure that guarantees that Lalín continues to be a gastronomic reference point in Galicia and throughout Spain," he said. He also stressed that the most important thing "is that this model comes from the bottom up: it is the restaurateurs who ask to be part of the seal, not the other way around. It is a genuine alliance between institutions and the economic fabric."

SPONSORS OF COCIDO MONTH

The Evaluation Committee also reviewed and approved other applications from businesses that will participate as sponsors of Cocido Month and, at the same time, adhere to the Quality Commitment associated with the Fair. They represent virtually the entire local food chain: dairy products, PDO cheeses, meat products, sausages, traditional wood-fired bakeries, pastry shops, wine and food distribution, @froitería, honey and specialised trade. Blanco highlighted that the total number of 68 companies reflected in the municipal minutes, which is four more than last year, shows "cross-cutting and extraordinarily solid participation, reinforcing the distinctive character of the Cocido Fair as an event that generates confidence, boosts the local economy and consolidates a gastronomic ecosystem based on authenticity and a verifiable level of quality".
